we have being playing with this program for over 10 years now and we have a lot of categories (over 1000) with over 20,000 products spread out between them

It is time to do a very big clean up which we are working on.

If a category is disabled why does is still appear in drop down lists all over the back end - things like adding stock etc, search by category, all that sort of stuff, it would be good if the category is disabled that category does not appear in those lists

The reason it still shows as people might use the disabled feature for temporary situations eg they might have a Christmas category that they only want to enable at this time of year, they won't want to delete it as it can be used again next year. If you don't want a category to appear it would need to be deleted.
