I'm wanting to put together an ecommerce site that will have approximately 30,000 unique products.

The thought of having to weigh and measure each item is horrifying, and of course, quite impossible.

There is significant size and weight differences between items, but they can be added to categories that contain similar weight/size items. Current estimate is we need around 8 different "flat rate" shipping prices, based on category.

Is there a way to set the cart up to charge based on the category? i.e. Category A items ship for $19.50, Category B items ship for $86.50, category C at $10.95, etc.

You can't charge based on category but you could do something like this. Go to the admin orders page and choose the category of products you want to set a weight for and click "List Products". Then in the Quick Entry on the left choose Product Weight. Now at the top add a weight and click "Set" which will set that weight for every product on the page. Now update and that way you can set weights for pages at a time. In a very short time you can have thousands of products updated.
Another way would be to list the products for a category as before and choose "Filtered Inventory" from the menu "Select Action...". Then open that spreadsheet in Excel delete all columns except for the product id and the product weight. Now set the product weight for every product (there must be some kind of "set this value for every cell selected / in this column etc.) Then save this as a comma separated CSV file and go to the ECT Admin CSV File Upload page to upload the changes.

Highlight the column CTRL +D will fill down the values based on the first value in the column range
