It would be useful for us to have a "Note" field on the admin product page so we can let comment about a product for the store admins.

Hi Guy, you have unlimited custom fields you can add and you do not have to use them on the front end of the website.
These can be used for adding notes for back end use only.
There are three available right away and you can add more if needed.
Do you need any instructions for those?
