What is the easiest way to find out how many times a particular product option was selected in the last 12 months?

I'm not sure I understand 100% by what you mean by "selected." I mean, if you mean how many times a product with that option was purchased then you've got the sales stats but if you mean a customer just selected or added to cart an option without purchasing then there isn't really a way to do that I'm afraid.
