Can you add a third address line to the checkout form? If not, is there some way to limit the number of characters that can be entered into the form fields for Address, Address 2 and Company?

You can have extra checkout fields but that doesn't include a third address field https://www.ecommercetemplates.com/phphelp/ecommplus/parameters.asp#exorder - there isn't a feature to limit the number of characters that can be entered.

Will something as simple as maxlength="41" work with the form field and not mess up something down the line? If this will work can you direct me to the section of code where I could insert this? We are having issues with people entering extremely long addresses and company names and our quickbooks application will only take 41 characters, so the transfer of data is just not working for every transaction.

That wouldn't work I'm afraid as it would just limit the width of the field rather than the number of characters that can be entered - that is set by the type of field which is set in the database.
