I'd like to change some text within the email that the ADMIN receives when an order is placed. We get an email with the subject line "Order at your store". Within that email the first line is: "Thank you for your order. Please mail your check or money order to:" -- and then the address. I must have edited this at some point, but I cannot find it anywhere. I even did a search with the includes.php file and the language.php file and that phrase does not appear anywhere.

Maybe you have set a custom header or footer for each payment setup in your store. Check in your admin under Orders Admin > Payment Providers check there.
The rest should in the email messaging admin Store Admin > Email Messages

I found it! I thought I put the answer here in case anyone ever has this issue and/or for the next time I can't remember how I did it :)

This text was only showing up on emails for orders for which the customer chose "email" as their payment method. So the text was within the Payment Provider section of the store admin - chose "Email" for payment method and then edit the header/footer of that email.
