How can I stop an item not saying our best seller? What makes a item saying Our Best Sellers?

To remove it you would add the following line
$csbestsellerstitle='';
Or to change it
$csbestsellerstitle='Your best seller title';

or if you need to remove all cross selling titles add the following to your css file
p.cstitle{display:none;}
