PHP releases all have a two year shelf life now https://www.php.net/supported-versions.php and it's recommended that you keep up to date to ensure you have the latest security fixes plus the benefit of performance improvements and feature additions. PHP 7.3 went out of support a month ago, but as you say, we do provide PHP 7.4 and PHP 8.0. Updating PHP is non-destructive, so the usual advice is to update to the latest and if the site spits out errors then make a note of them and back up version by version until the errors stop; then you can try and work out how they should be fixed. In the case of ECT we have already done the testing for PHP 8.0 (in fact we use that on the ECT hosted stores) so I wouldn't expect you to have any problem with ECT 7.2.5, but 7.2.3 pre-dates PHP 8.0 so that might barf. Both will be fine with PHP 7.4 as that's been around a while. If you have mods it's quite possible that they are not compatible, but you won't know until you try and in that case, as mentioned, you can just roll back until your mod provider has a solution for you. It only takes a minute to switch and switch back if there are mod issues. Hope that helps.
