Is there a way that you can automatically have the page PRODUCTS list product by certain parameters...

such as by popularity, random, etc.

I could even go as far as adding the search term "hot" in 60 products and have those show up. Though it would be a manual thing each week/month to reset that and add new ones...

In Main Settings > Store Settings you can set Default Product Sort Order
It's the 5th option down.
